Hello! Happy Daylight Savings 🙂 I’m absolutely loving the extra light in the evenings. More time for riding, ball and of course, pictures…Can you spot the llama in the first picture? Scares Preston every time he sees it!!
But as much as I’m obsessed with ponies, dogs and pictures of ponies/dogs, I’m also obsessed with food. So let’s move on to the eats of the day!
Two Breakfasts for One! This super simple muffin combo has been working out perfectly for me! My stomach is happy while working out AND satisfied until lunch! And so are my taste buds 😉
Pre-Workout Fuel: (at home in the dark of the morning!)An oatmeal/chia/apricot/almond/chocolate chip muffin with peanut butter
Post-Workout Fuel: (at work)Egg muffin with spinach
Tomato/Cucumber/White Kidney Bean salad with cilantro and limeTopped with guacamole and scooped up with tortilla chipsUgly, but deliciously simple, filling and flavorful!I finished things off on a sweet note with a homemade oatmeal chocolate berry square (kinda like these Cranberry Chocolate Oatmeal Balls)
Cold apple with slices of cheddar cheese
A simple on-the-run bean dip since we were late for a movie! TJ’s Salsa Beans // Double Roasted Salsa // Shredded Chicken // Green ChilesMixed all together, heated and topped with a generous portion of avocado and (once again) scooped up by tortilla chips.
I guess I wasn’t really feelin’ utensils today! Everything was finger food/eaten with chips 🙂

Do you prefer finger foods or silverware? I don’t know if I really have a preference. I think I tend to eat faster with finger foods — never good!
