Whew, what a weekend! We went up to Murphys with my grandparents to do a second round of research for their annual wine trip. I’ll do a full recap soon – so many restaurants and meals!
We got home this afternoon, so I also snuck in some food prep.
- A quinoa, black bean and chicken casserole based off this recipe. I didn’t have any rice!! So I subbed for prepared quinoa. Quite a tasty and hearty lunch for the week!
- An 8 egg frittata with green peppers, chicken breakfast sausage, yellow squash and tomato. A healthy veggie-laden option for breakfast!
- Oatmeal balls-turned-loaf. I experimented with soaking the dates and chia seeds aaaand made it to watery 😦 Super tasty but too loose. Based off my Cranberry Chocolate Oatmeal Balls but too much water and a mix of dried fruits.
More to come later! I’m tiredddddddd from all the eating and cruisin’ around 🙂 So much adventure!
