Food Prep 1/13

I food prepped like a BOSS this weekend with my 3.5 pounds of dates from Costco and BAD-ASS food processor Abe got for me!

Blog inspired:

Copy-cat Lara bars, and my version (no stevia, half honey/half date and chia seeds!) of these Chocolate Peanut Butter Balls.  DSCN08122014-01-13 20.53.39

Fridge-Contents inspired:

Tomato, cucumber and gorgonzola salad (dressed with red wine vinegar, basil infused olive oil, and a dash of TJ’s 21 Seasoning Salute) and egg muffins with maple apple sausage.

Lunches:
  • Quinoa, tomato and cucumber salad over greens.
  • Quinoa and black beans, to be dressed with leftovers or chicken, salsa and cheese.

Yum, yum, yum! Hopefully this will keep me eating healthy this week 🙂
