Fancy Dinner and Food Prep

Happy Sunday!

Last night we went out to a nice dinner in Sacramento to celebrate Abe being done with the LSAT. We went to Bandera and it was the perfect date night 🙂 The food was amazing, but it was much richer than the food we make at home, not to mention the portions were enormous! I love eating good food out at restaurants, but no amount of tastiness outweighs that feeling of well being when you eat a nutritious meal at home. Today I cooked up a storm to ensure I would have plenty of wholesome food for this coming week. Check in tomorrow for a meal plan update!

Today’s Food Prep

Hard boiled eggs – I never have time to fry/scramble/cook eggs during the week, so I finally hardboiled some to take to work. Fast, easy protein on the go!

Quinoa Breakfast Bars – I made these last week for the first time and I am SOLD! They kept me full and energized until lunch. The one day I had peanut butter toast for breakfast instead, I had to snack before lunch- no bueno.

Splurge! Nutella Cookies – Saw these on Ambitious Kitchen and had to try them… 5 ingredients = so easy!! And they are beyond delicious! SO. FUDGE-Y.

2013-10-06 14.00.26And of course, Quinoa – I needed to make some for the Quinoa Breakfast Bars so I made a little extra in the rice cooker for lunch. I normally make three extra servings for the week, but since its in my breakfast each day, I’ve been holding back. Is it bad to eat quinoa for every meal of the day?? For my quinoa lunch, I topped it with some Artichoke Antipasto, Marinara Sauce and goat cheese we had in the fridge and threw in some frozen spinach. Yum!

2013-10-06 13.49.09Now its time to do dishes, bleghh. The worst part of cooking, in my opinion! I told myself I would do them while I watched Miley Cyrus host SNL, but alas, I didn’t. (I think she did pretty well, btw!) Now I have to do them in silence. Then off to workout and see the pony 🙂 Preston has been wild lately with the changin’ of the seasons, so its always an adventure out to the barn!
